Cocinar a 200ºC por 12 minutos. - Almíbar de Café:
Hacer un almíbar con el agua y el azúcar. Agregar el café disuelto en agua y el licor. - Crema Mascarpone:
Batir las yemas con el licor a baño maría, hasta que la preparación nape (espese) y seguir batiendo fuera del fuego hasta enfriar.
Incorporar la gelatina previamente disuelta en agua y activada.
Ablandar el queso batiendo un poco e incorporar la preparación anterior.
Luego incorporar la crema batida al medio punto en forma envolvente. - Armado:
En la base del molde elegido colocar una capa de vainillas y embeber con almíbar de café. Sobre ello poner una capa de crema mascarpone.
Poner una segunda capa de vainillas, embeber con almíbar de café y terminar con el resto de la crema mascarpone y llevar al frió. Terminarlo espolvoreando cacao amargo en la superficie.
