- Para la crema: colocar las yemas en una cacerola con el azúcar y el agua. Calentar a baño María o a fuego muy bajito y batir a mano por 5 min hasta lograr que se funda el azúcar y se forme un sambayón. (Hay que lograr que las yemas lleguen a 85° para que no queden crudas).
- Retirar del fuego y seguir batiendo (puede ser con batidora) hasta lograr una crema algo espesa.
- Incorporar a la crema de huevos el queso. Mezclar hasta integrar y por último agregar la crema de leche previamente batida. Mezclar bien para unir todos los ingredientes.
- Armado: embeber las vainillas en el almíbar de café, y cubrir la base del molde. Cubrir con una capa de crema de Tiramisú y repetir las veces que alcance. (La última capa debe ser de crema)
- Para finalizar, espolvorear con cacao amargo. Llevar a la heladera por 3 horas como mínimo antes de consumir.
