    En un recipiente montamos las yemas con la mitad de azúcar hasta blanquearlas.
  3. En un bowl poner las claras con la otra mitad de azúcar hasta llegar a punto de turrón.
  4. Colocar harina en la yemas alternando con el merengue francés.
  5. Colocarlas en una manga y después en una charola para hornear por 20 min a 180°C.
  6. Para el jarabe, poner a fuego medio, el agua con el azúcar y el café hasta que hiervan.
  7. Relleno
    Haremos una mezcla llamada paté a bombe. Se debe hervir el azúcar con 40 ml de agua hasta que alcance el punto de bola suave. Posteriormente batir las yemas e incorporar lentamente el azúcar.
  8. Vaciamos el caramelo bola suave a a las yemas y lo batimos bien.
  9. Hidratamos la grenetina a baño maría, por cada sobre de grenetina ponemos 2 cucharadas soperas de agua, una vez lista se la vaciamos a las yemas y lo revolvemos bien.
  10. Acremamos el queso crema y ahora integraremos el paté a bombe al queso crema y lo revolvemos.
  11. En un bowl montaremos la crema para batir y después vaciaremos un poco de crema en el paté a bombe hasta disolverlo bien y de ahí lo demás lo agregaremos poco a poco y lo revolveremos de forma envolvente.
  12. Una vez terminados estos pasos remojaremos las soletas en el jarabe de café y las iremos colocando en el molde.
  13. Lo tapamos y lo llevamos a refrigerar por una hora.
    Lo sacamos del refri lo desmoldearemos y alrededor le pondremos soletas y un listón.
