  7. Dejar cocer a fuego alto 10 min. Transcurido este tiempo bajar el fuego añadir las gambas y las cigalas que habíamos reservado y dejar cocer 8 min más. El marisco acaba de cocerse en este tiempo por lo que es importante no hacerlos demasiado al principio.
  8. Trancurido este tiempo apagamos el fuego. El fideo debe quedar suelto. Dejamos reposar la fideuá unos 5 o diez min yo cubro la paella con papel de cocina.
  9. Es importante dejar reposar para que el fideo acabe de absorber el poco caldo que quede.
