Fideuá, es una paella de marisco pero en lugar de arroz lleva fideos, inventada por unos pescadores en Gandia (Valencia) que se les olvido el arroz y disponiendo de fideos (finos) elaboraron lo que se ha convertido en un plato exquisito. Aunque en un principio eran fideos finos hoy en día se elaboran también con fideos especiales para Fideuá del nº 4 y diferentes tipos de pescado. Esta es mi forma y espero que les guste.

- 800 gr Fideos de Fideuá
- 18 Gambón grande
- Filete hermoso de Emperador 1 (Pez Espada o Rape)
- 2 Sepias medianas
- 1 Kilo Mejillón (Se cocerá antes y el caldo lo añadimos al fumet
- 3 Litros Fumet de pescado (Caldo de pescado)
- 4 Tomates de pera (Rallados)
- Cebolla mediana 1
- 6 Ajos
- 1 Pimiento rojo
- 1 Cucharita de café Pimentón dulce
- 1 Cucharita de café Colorante
- 7 u 8 Cucharadas soperas Aceite de oliva virgen extra
- Al gusto Sal
Instructions to make to make Fideuá a mi manera
- En la paella con el aceite caliente salteamos los gambones en lo que previamente le hemos quitado las antenas y recortado las patas, salamos, un poco antes de que estén y reservamos.
- Añadimos a la paella la sepia troceada en trozos pequeños, a mitad de cocción añadimos el emperador troceado, la cebolla troceada, los ajos pelados y el pimiento a tiras medianas.
- Cuando dore la sepia le añadimos los tomates rallados y dejamos que se sofría.
- Le añadimos el pimentón dulce removemos unos segundos y le añadimos el caldo de pescado (Fumet) el colorante alimentario, dejamos cocer 15 minutos y rectificamos de sal, le añadimos los fideos, repartimos bien y dejamos cocer 18 minutos.
- A 3 minutos del final de la cocción le repartimos los mejillones y los gambones a nuestro gusto, al final de la cocción dejamos reposar 5 minutos y a comer.
