- Pelar la cebolla y un diente de ajo y lo picamos todo bien pequeño. Rallamos unos tomates limpios
- Cogemos una paella o cazuela amplia, donde podamos preparar la fideuá y echamos un chorreón de aceite de oliva virgen, ponemos a calentar a fuego medio y sofreímos el ajo picado y la cebolla, hasta que queden bien dorados, con un poco de sal por encima para que se poche bien la cebolla y removiendo siempre para que no se nos quemen. En ese momento agregamos el tomate triturado y dejamos cocinar unos minutos a fuego suave para que vaya tomando cuerpo y espesando poco a poco.
- Añadimos el pimentón dulce y lo cocinamos un minuto removiendo para mezclarlo bien, y echamos el caldo, que habremos calentado previamente. Dejamos que comience a hervir y lo bajamos a intensidad media para agregar entonces los trozos de sepia limpia, y tras unos 5 minutos y los fideos especiales para fideuá, además de un poco de azafrán.
- Mantenemos la cocción de los fideos a fuego no muy fuerte durante unos 15 minutos aproximadamente
- Tapar con papel de aluminio y dejar reposar 10 minutos
