- Pelamos las gambas y reservamos los calamares. Con las cabezas y las pieles preparamos un fumet que luego emplearemos para terminar el plato.
- En una cazuela añadimos 2 cucharadas de aceite de oliva y doramos las cabezas de las gambas y el resto de pieles, mejillones y almejas.
- Cuando hayan tomado color añadimos el agua y dejamos cocer durante 15 minutos. Reservamos hasta el momento de su uso.
- En una nueva cazuela calentamos un chorrito de aceite de oliva y añadimos la cebolla pelada y troceada en dados pequeños y los dientes de ajo troceados.
- Dejamos que se doren las verduras unos minutos.
- Lavamos los pimientos y los troceamos en daditos. Cuando la cebolla comience a coger color los añadimos a la cazuela y rehogamos con el resto de verduras durante 7 u 8 minutos
- Mientras se hacen las verduras lavamos y troceamos los calamares.
- Los añadimos a la cazuela y los freímos con el resto de verduras. Cuando estén listos incorporamos los fideos y los rehogamos.
- Incorporamos el equivalente a 4 tazas del fumet de pescado que tenemos reservado.
Lo colamos para evitar pasar al guiso algún resto de las pieles de las gambas. Salamos y añadimos unas hebras de azafrán. - Dejamos que cuezan el guiso durante 10 minutos. Añadimos las gambas peladas que tenemos reservadas. Seguimos cociendo hasta que la pasta esté en su punto.
- Si vemos que necesitamos un poco más de caldo lo podemos agregar en cualquier momento. Sólo tenemos que comprobar la sal al final de la cocción y listo
