- Hacemos primero el caldo: se pelan las gambas y se ponen a hervir las peladuras en el medio litro de agua. Cuando hiervan, se retiran las peladuras y se tiran. Nos quedamos con el agua, donde ponemos las almejas. Daremos un hervor, hasta que se abran. Las separamos y reservamos. Colaremos y ya está.
- Ahora ponemos en la paellera un chorrito de aceite de oliva virgen (hasta cubrir el fondo) y la ponemos al fuego. Echamos las gambas peladas, la sepia limpia cortada en cuadrados y damos un meneo. Cuando las gambas estén doradas, las retiramos y reservamos.
- Cuando la sepia empiece a dorarse, echamos la verdura picada fina (los ajos, la zanahoria y el puerro) y con fuego suave lo dejamos sofreír alrededor de 10 minutos, removiendo de vez en cuando.
- Echamos los fideos y les damos un meneo en la paellera. A continuación echaremos el caldo que preparamos al principio, junto con un poco de sal, el colorante y un poco de orégano y ponemos a fuego fuerte. Cuando hierva, bajamos a fuego medio y lo dejamos cocer alrededor de 10 minutos.
- Cuando falte un minuto para que la fideuá esté lista echamos las almejas y damos una vuelta con la cuchara de madera y al final ponemos las gambas por encima.
- Notas: Si se tienen cigalas, se ponen junto con las gambas y con la sepia al principio y cuando estén doradas se retiran.
- Notas: Si se tienen mejillones, se usarán también para el caldo, igual que se hizo con las almejas. Los abriremos en el agua para mejorar e caldo, y retiraremos las cáscaras para añadirlos al final junto con las almejas.
- Notas: Si tenemos unas pocas más gambas, pelaremos la mitad para el caldo y la otra mitad las pondremos enteras en la paellera para dorarlas en el aceite de oliva en el primer paso.
