- Antes de nada cortamos el emperador en trozos medianos, lo mismo que las setas. Picamos los ajos y la cebolla. Pelamos el tomate y lo rallamos. Las gambas las pongo en una cacerola con unas gotas de aceite y les doy vuelta y vuelta, las pelo y reservo las cáscaras y las cabezas por una parte y la "chicha" por otra.
- Pongo el litro de caldo (lo compre hecho) de pescado en una cazuela y dejo hervir un ratito con las cáscaras y las cabeza (para que coja más sabor), lo colamos y reservamos.
- Ahora en una paella o caldero, echamos las 4 cucharadas de aceite y lo pongo a calentar a fuego medio, echamos el ajo y la cebolla picada, con un poco de sal y dejamos que sofría, cuando empiece a estar dorado, echamos el tomate triturado y removemos todo. Seguidamente echamos el emperador y las setas y volvemos a sofreír unos minutos.
- Agregamos ahora la cucharada de pimentón, y mezclamos bien, una vez esté bien mezclado echamos el caldo de pescado y la pizca de colorante, dejando hervir durante 15 minutos a fuego medio.
- Lo probamos de sal y añadimos los fideos, esparciéndolos bien por todo el caldero, los dejamos a fuego medio/bajo durante 12 a 15 minutos aproximadamente hasta que se consuma el caldo, 5 minutos antes de que se consuma el mismo ponemos las gambas que habíamos reservado y los dejamos reposar unos 4 o 5 minutos.
