- 1 pizca colorante
- 1 kg. fideo grueso
- 1 puñado calamares pequeños

- En una olla hacemos la mezcla del concentrado y el agua, removemos bien y le damos un calentón y apartamos a un lado.
- Picamos la cebolla y cortamos el pimiento en tiras finas.
- Echamos un chorro de aceite en el paellero y empezamos sofriendo los pimientos, cuando los tengamos dorados reservar.
- En ese mismo aceite marcamos los calamares previamente limpiados y reservar también junto con los pimientos.
- Seguidamente añadimos la cebolla, cuando la tengamos blanda y doradita añadimos el tomate, seguidamente añadimos la salmorreta y dejamos unos minutos sofriendo.
- Pasado ese tiempo añadimos los fideos y también el colorante, mezclamos todo bien y dejamos sofriendo un par de minutos. (el fideo se sofrie crudo para sellarlo y para que una vez se finaliza todo el proceso quede suelto)
- Seguidamente añadimos el caldo, por cada kilo de arroz yo añado 2,5 litros de agua (el caldo restante se puede congelar para otras veces), dejamos hirviendo a fuego medio, pasados unos minutos, cuando veamos que el caldo está casi al ras de los fideos (ver foto) será momento de probar de sal por si hubiese que rectificar y también añadiremos los calamares y pimientos que teníamos reservando, dejamos que se consuma casi todo el caldo y ya estaría listo.
