- Cuando estén pochadas, añadimos una cucharada de tomate frito y tras un par de vueltas le echamos el vaso de vino blando y dejamos evaporar todo el alcohol. Añadimos un poco de colorante y dejamos cocinar unos momentos todo junto
- Pasamos por una batidora y volvemos a ponerlo en la sartén, añadiendo el choco que habíamos reservado y la fideuá. Cocemos durante unos 14 minutos.
- Unos minutos antes de terminar la cocción, añadimos las almejas que hemos tenido en agua con sal para que suelten la arena. Tapamos el guiso.
- Cuando hayan pasado los 14 o 15 minutos, apagamos el fuego y añadimos los cuerpos de las gambas para que se hagan con el calor del guiso.
- Podemos servir, con un poco de perejil picado por encima.
