- Cogemos la pechuga de pollo y la salamos y ponemos un pelín de ajo yo puse del de bote, después la rociamos con el zumo del limón y la dejamos una hora mas menos con el limón. Mientras preparamos la berenjena, la pelamos y la cortamos en rodajas, cubrimos de sal y dejamos una media hora que sude, pasado este tiempo la lavamos bien con agua y secamos con papel de cocina.
- En una sartén ponemos una gota de aceite y ponemos las rodajas de berenjena en la sartén, dejamos hacer unos tres minutos por cada lado y las sacamos y reservamos.
- Cogemos la pechuga de pollo y también la pasamos por la sartén un minuto por cada lado retiramos del fuego y la estiramos bien.
- Entonces colocamos las rodajas de berenjena encima hasta cubrir la pechuga, la enrollamos bien y amaramos para que no se abra la pechuga.
- Cogemos una fuente para horno y la engrasamos un poco con una cucharada de aceite colocamos la pechuga en la fuente y metemos al horno precalentado a 180 grados y dejamos unos 10 minutos.
- Mejor controlamos que a lo mejor va por menos tiempo para que no se nos quede muy seca.
- Sacamos del horno y dejamos enfriar, si hicimos la pechuga entera la partimos en trozos y si eran los filetes ya servimos así yo serví acompañado de unos champiñones.
