- 500 gr. Fideos n°2 del Gallo u otro igual
- 1 Cola de rape medianito
- 1 Sepia fresca medianita
- 8 Gambas rojas (2 por persona)
- 1 Kg. Mejillones
- 350 gr. Chirlas
- 3/4 L. Caldo de pescado
- 3 Dientes ajos
- Perejil picado
- Aceite de oliva
- Sal (opcional)
Steps to make to make Fideuá marinera
- En una paella le pongo un chorrito de aceite, cuando esté caliente añado todos los fideos y los tuesto un poco. Luego los separo y los pongo en un cuenco de cristal, cerámica, núnca de plástico.
- En la misma paella añadimos un poco más de aceite y frío las gambas. También las separo
- Seguimos con la misma paella, añadiendo más aceite y pongo los ajos y el perejil picado, dejamos unos segundos y añadimos el rape y la sepia previamente cortada a trocitos. Dejamos que se vaya cociendo y que suelte el agua.
- Cuando haya soltado el agua, se le incorpora los fideos, se remueve bien y se le añade 5 cazos del caldo de pescado + ó - Se le añade los mejillos (antes hechos al vapor) sin las cáscara).
- Se va removiendo para que no de pegue. Mientras hacemos las chirlas al vapor (se hacen en un "periquete") y las dejamos para luego.
- Cuando los fideos estén casi hechos, se pone al horno a la parte de arriba "grill" para que se tuesten. Se remueven una vez, cuando se vea ya tostaditos.
- Luego lo saco, le añado el resto de ingredientes, las chirlas, remuevo y las gambas. Lo vuelvo a meter al horno (ya apagado) con el residuo del calor. Lo dejo un ratito y listo.
